What is the difference between strong and very strong flour?
and what difference would it make if I used ‘very strong’ instead of ‘strong’?
The term ‘strong’ indicates that the flour has a high gluten content. A high gluten content flour is used to make bread and puff pastry, the gluten makes it stretchy so giving a good rise. ‘Soft’ flour has a much lower gluten content and makes lovely light, soft sponge cakes etc.
In real terms using strong or extra strong won’t make a huge difference in bread or pastry.
